This chipotle pineapple baked flounder is a super easy meal prep or just a weeknight meal – and I’m not just saying that this time! I’m trying to bring you guys more straightforward recipes to prove that eating healthy doesn’t have to be hard (or boring for that matter). This fish is tasty as it is but if I make it again I’ll modify it a little for some flavor boost – I’d add a little Himalyan salt and lime juice for sure and probably some garlic.
I roasted a whole bunch of asparagus too but that didn’t go far – it shrinks so much in the oven! I do love some asparagus though – simply toss with a little oil and minced garlic and roast it for 30 minutes at 425. Can’t get any easier than that.
The fish was bought frozen from SAM’s because we’re on a budget (it was wild caught though!), This makes it easy to unwrap the filets, place in a baking pan or sheet (lined with foil AND greased), and season. The pineapple is a quick 5 minute job if you have a handy slicer/corer. And there you have a delicious meal. Make some potatoes or rice with it too if you aren’t as low-carb as I am and typically eat larger meals.
