Chocolate Chip Banana Oatmeal Pancakes

So I make a lot of pancakes (hence the blog title). They’re kind of my thing in case you haven’t caught on by now. I’ve been using different recipes every time I make them pretty much but I do have a couple favorites. This recipe is hands down my #1 pancake recipe now. It’s made without any flour or protein powder (I like protein pancakes but not everyone I make them for does and with my new running schedule I need more carbs than protein. Also, protein pancakes don’t get as fluffy). They’re naturally sweetened with banana and a little bit of honey. And I love adding chocolate chips (okay, a little bit of refined sugar there…sorry). But I can’t have banana pancakes without chocolate chips!

Chocolate Chip Banana Oatmeal Pancakes

I had a college friend in town for the night on Saturday and I made these (with some bacon) for us on Sunday morning before we went hiking. We got to eat them out on my porch together in this amazing Memorial Day Weekend weather we’ve been having. Mmm…so good.

This was taken straight from Mountain Mama Cooks. I didn’t use gluten free oats or organic bananas/eggs…because I don’t buy everything organic and I’m not gluten free, but feel free to use whatever you wish!

Banana Oat Pancakes

15 minutes

Total Time: 25 minutes

Yield: 12 pancakes

Serving Size: 3 pancakes


  • 2 cups oats
  • 1 1/4 cups vanilla almond milk, unsweetened
  • 1 large ripe banana
  • 1/2 teaspoon ground cinnamon
  • 1 heaping tablespoon pure honey
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1 large egg
  • 1/2 cup chocolate chips (I used Ghirardelli Bittersweet...probably more than 1/2 cup too, but 1/2 cup should be enough)
  • coconut oil or butter for cooking (I use coconut oil)


  • Place all ingredients, except egg, chocolate chips and coconut oil in the base of a blender and blend until smooth.
  • Add egg and pulse a few times until egg is fully incorporated.
  • Pour batter into a large bowl and stir in chocolate chips (this is technically optional...)
  • Heat a griddle or large saute pan over medium heat and melt a teaspoon or two of coconut oil. When hot, scoop 1/4 cup of batter out onto the pan. When it starts to bubble flip and cook on the other side for another minute.

    • I’ve never had a problem with pancakes being too dry – but that’s likely because of toppings. Maple syrup is a classic but recently I’m more into blending fruit and Greek yogurt together to make a sauce for them that’s a lot healthier. Oh and you can never go wrong with extra chocolate chips and banana slices in the case of this recipe!
