This was one of my random ideas. Inspired by making a paleo bread recipe that did not rise (pictures are always deceiving), I was slicing it up and thought I could make these little slices into french toast sticks. Then that developed into french toast “casserole”. But just a single serving with a single egg-white in a ramekin. Since the bread itself is already pretty high in fat I didn’t want to use a whole egg. But egg white and a little milk is plenty of liquid for a single serving. Just mix it with a little cinnamon and vanilla and you have yourself some delicious paleo french toast! I added the blueberries because we had them and blueberries are always a good choice.
Funny story about the bread. I was making it on Wednesday morning. Before I remembered that I haven’t seen my loaf pan since I moved in January, I was already mixing up the ingredients. So I actually ran over to food lion across the street in my sweats like I had just rolled out of bed and bought a $4 loaf pan. I really needed to make this bread guys. I was out of english muffins and would have made more but I felt like trying something different. I get bored easily.
Obviously this isn’t the highest protein breakfast so this was actually second breakfast. I had my egg-whites, sausage and veggies with Justin before he went to work that day. Oh and I made a protein glaze for it…just protein powder, almond milk and a little stevia. YAY Protein!!
